Banana Coconut Chia Cookies
Bananas, coconut and chia seeds come together in a delicious, healthy cookie safe for anyone to eat!

  1. Preheat oven to 350 degrees. Mash bananas in a bowl. Add shredded coconut, chia seeds, cinnamon and vanilla and mix together. Grease a cookie sheet or use parchment paper. Form about 12 cookies about 1 inch wide and flatten a bit. Bake for 15-20 minutes or to your liking.
Recipe Notes

All bananas aren’t equal. I used medium sized bananas. Adjust the coconut and banana ratio so the mixture is able to form balls, more on the wet than the dry side. 

Feel free to add maple syrup if bananas aren’t sweet enough for your taste buds. With that extra wet, you may need to add more coconut.

Oats can be used in place of shredded coconut.
