BBQ Pulled Pork Skillet

Is it obvious yet that I use a lot of cabbage in my recipes? Cabbage and carrots are super cheap and they are also super healthy. What’s not to love? I buy those two vegetables almost every week and then add anything to them. This time it was for a BBQ pork skillet.

I had purchased half of a pig from a very kind friend and so there are plenty of shoulder roasts in the freezer. I like to put these in the slow cooker and add BBQ sauce. 

That’s all it is. Pork in a slow cooker and then cook up cabbage, carrots, and whatever else you like to eat. I’ll admit it’s not the most elaborate thing to eat but the simplicity makes it appealing to myself, and it’s healthy.

Traditionally, pulled pork is eaten on a bun. Find out here why we shouldn’t eat too many of those buns. If you make your own, knock yourself out. Instead, skip that and eat it with some veggies. Cabbage and carrots are easily seasoned with any type of flavor. 

BBQ Sauce

In an ideal world, we make our own BBQ sauce (which is really easy by the way). I’ve made this recipe from Gimme Some Oven and it was delicious.

Alternatively, you buy a bottle of BBQ sauce. What we want to look for here is ingredients. Many varieties have high fructose corn syrup as one of the main ingredients.  This is not what we want to consume due to its link to weight gain, diabetes, and liver health. I found a brand at my local store that has straight up real ingredients in it, though I prefer to make my own.

BBQ Pulled Pork Skillet

This recipe is easy, budget-friendly, and a delicious way to enjoy bbq pork while adding vegetables to the meal.

Ingredients
  

  • 1-3 lb pork roast cooked and shredded
  • 1 head cabbage sliced thin or shredded
  • 3 medium carrots shredded
  • 2 cloves garlic minced
  • 1 small onion sliced
  • 1 cup barbecue sauce or more
  • salt & pepper
  • 2 tbsp olive oil/coconut oil

Instructions
 

Pork

  • If you need instruction in cooking pork, just add it to a slow cooker on low for 8 hours. Add a little water so it doesn't stick and a bit of salt and pepper and BBQ sauce. I also like to add garlic, onion, paprika.

Make Skillet

  • Melt oil in pan. Add cabbage, onion, carrots, garlic. Season with salt and pepper. Cover for a bit to steam (optional). It will take about 10 minutes to fully cook. If you like it soft or crunchier, you decide. Add the barbecue sauce (as much or as little as you want to use) and cooked pork. Serve it up.

    This looks quite the flavorful dish!! My boys love pulled pork, but we have never used cabbage. This would be a nice twist to dinner one night.

    i honestly think pork was made for a slow cooker (or maybe the other way around!) – the two are such a great combo, i love this recipe and we are also big fans of cabbage and carrots in our house, so I am keen to give this a try!
