Bananas, coconut and chia seeds come together in a delicious, healthy cookie safe for anyone to eat!
All bananas aren't equal. I used medium sized bananas. Adjust the coconut and banana ratio so the mixture is able to form balls, more on the wet than the dry side. Feel free to add maple syrup if bananas aren't sweet enough for your taste buds. With that extra wet, you may need to add more coconut. Oats can be used in place of shredded coconut.
