Healthier Mini Chocolate Muffins
A healthier version of the popular mini muffins
Dry ingredients
- 1 cup white whole wheat flour half white and half wheat would work, or any other types
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet ingredients
- 2 eggs
- 1/4 cup honey or maple syrup
- 2 tsp vanilla
- 1/4 cup melted coconut oil any oil or melted butter
- 1 cup greek yogurt whole
- 1/3 cup mini chocolate chips
Preheat oven to 375 degrees
Mix all the wet ingredients
Mix the dry ingredients
Add dry and wet ingredients together - do not overmix
Gently fold in chocolate chips
Put into a greased/sprayed or silicone mini muffin pan
Bake for about 12-15 minutes
Use any add-ins. If you don't like chocolate chips, use anything. Dried fruits, nuts, hemp seeds.
If it is fresh or frozen fruit, coat the pieces in flour before adding.
