A Healthy Chocolate Snack
Often I find myself craving chocolate. Most snacks that involve chocolate are NOT healthy. Even though there’s articles about chocolate being healthy, it’s only relevant to cacao in the rawest form. So, really dark chocolate.
Can you tell I happened upon a new camera yet? What a HUGE difference. I’ll be honest here I am proud of the difference in photo quality and I hope you enjoy them.
Benefits:
Cacao powder mixed with a natural sweetener, such as dates, can provide that satisfying chocolate taste. Cacao powder will have minerals and it is not mixed with refined sugar. Dates have fiber and will provide a longer lasting energy supply rather than a quick rise in glucose and a crash. A healthy chocolate snack is the result and it does not have to be baked.
The recipe comes together in a matter of minutes. The ingredients are easily interchangeable in the nut category. If you have almonds available instead, the flavor may be different yet still delicious.
Cacao Date Bars Recipe
Ingredients:
- 2 c pitted dates
- 1 1/2 c walnuts
- 1/3 c cacao powder
- 1/2 c puffed brown rice cereal (or equivalent)
- 2 tbsp coconut oil, solid
- 1 tsp vanilla
Directions:
- Add all ingredients to a food processor
- Process until clumpy and able to form together well
- Press into a loaf sized pan or equivalent
- Refrigerate for approximately 2 hours before cutting bars
There you have it. Investing in a food processor is well worth it. Dates and nuts can make many quick, healthy easy snacks with so many combinations.

May 28, 2017These were actually really yummy- sweet chocolate granola bar taste. I hate dates but gave this a try- I do not taste them other than the sweetness, which is and plus for me. One tip is to make sure to press them into the pan pretty firmly. I probably didn’t press it down as hard as I should and ended up with a few crumbly areas.
