Those popular mini muffin bags have 20 grams of sugar and they’re aimed at kids. That’s a dessert in my view, so here are some mini muffin bites made healthier.
How are these chocolate chip mini muffins healthier?
More fiber with the use of different flours (but not too much to change the texture) – white whole wheat or half white and half wheat.
Extra protein with the use of greek yogurt and eggs.
Significantly less sugar with a smaller amount of honey or maple syrup.
Healthier Mini Chocolate Muffins
A healthier version of the popular mini muffins
Ingredients
Dry ingredients
- 1 cup white whole wheat flour half white and half wheat would work, or any other types
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet ingredients
- 2 eggs
- 1/4 cup honey or maple syrup
- 2 tsp vanilla
- 1/4 cup melted coconut oil any oil or melted butter
- 1 cup greek yogurt whole
- 1/3 cup mini chocolate chips
Instructions
- Preheat oven to 375 degrees
- Mix all the wet ingredients
- Mix the dry ingredients
- Add dry and wet ingredients together – do not overmix
- Gently fold in chocolate chips
- Put into a greased/sprayed or silicone mini muffin pan
- Bake for about 12-15 minutes
Notes
Use any add-ins. If you don’t like chocolate chips, use anything. Dried fruits, nuts, hemp seeds.
If it is fresh or frozen fruit, coat the pieces in flour before adding.
