I want to share my favorite cookies. These chocolate chip coconut cookies are crunchy and chewy at the same time. They are filled with healthy fats. I like to keep these in the fridge or freezer for a quick snack.

Chocolate Chip Coconut Cookies
Delicious healthy, filling cookie snack
Ingredients
  1. 2 1/2 c unsweetened shredded coconut
  2. 1/2 c coconut palm sugar
  3. 1/4 tsp salt
  4. 1/2 c coconut oil
  5. 1 tbsp vanilla
  6. 2 eggs
  7. 1/2 c chocolate chips
  8. 1/2 c walnuts

Instructions
  1. Preheat the oven to 350 degrees. Mix together coconut, sugar, salt, coconut oil, vanilla, and eggs. Add in the chocolate chips and walnuts. Spoon these onto a cookie sheet into 12 cookies. It is best used on a pan with ridges as you may have an oily mess (but tasty).
Notes
  1. The process is easier if the coconut oil is not melted completely before mixing in.
  2. Best enjoyed cold especially in warmer weather
