I want to share my favorite cookies. These chocolate chip coconut cookies are crunchy and chewy at the same time. They are filled with healthy fats. I like to keep these in the fridge or freezer for a quick snack.

Chocolate Chip Coconut Cookies
These are best enjoyed out of the fridge or even the freezer.


- 2 1/2 c unsweetened shredded coconut
- 1/2 c coconut palm sugar
- 1/4 tsp salt
- 1/2 c coconut oil
- 1 tbsp vanilla
- 2 eggs
- 1/2 c chocolate chips
- 1/2 c walnuts
- Preheat the oven to 350 degrees. Mix together coconut, sugar, salt, coconut oil, vanilla, and eggs. Add in the chocolate chips and walnuts. Spoon these onto a cookie sheet into 12 cookies. It is best used on a pan with ridges as you may have an oily mess (but tasty).
- The process is easier if the coconut oil is not melted completely before mixing in.
- Best enjoyed cold especially in warmer weather
Walnuts also have omega-3 fats which are great for brain health. I feel better about using coconut sugar as it is not refined and doesn’t raise blood glucose quite as high as conventional sugar.
