Sourdough Pancake Recipe
This one is one of those treat yourself breakfasts. It’s not like the floury pancakes you make out of the box. It’s like melts as you eat it. Maybe it’s not the healthiest thing on my blog, but it sure it healthier than the average pancake. I talked about how fermenting helps us digest grains better on my homemade sourdough bread post as well. Basically, the starter is a fermenting mixture of bread and water and allows nutrients to be more easily absorbed by the body and makes the flour more digestible.
I honestly don’t know where this recipe came from. I found it in my old recipe book that I tried to start once. It has maybe 10 recipes total but now Google bookmarks and Pinterest are easier. Either way, it used to have sugar and olive oil as the sweet and fat source. My husband has made it that way many times and it was good, but I think this is better with melted butter and maple syrup. I don’t even need much maple syrup to eat them.
My starter is white flour but the night before pancakes, I make a separate fermenting bowl of flour and water where it ends up being 1 cup of whole wheat and water for half my starter. You can use any variety or mixture amount for white or wheat. The pancakes are less melty with wheat but still melty! Is melty even a word?
I like to use cast iron to cook these. The pancakes do not stick that way. Otherwise I would use coconut oil to cook.

Sourdough Pancake Recipe
- 2 cups sourdough starter made with a combination of white and wheat
- 1 large egg
- 2 tbsp maple syrup
- 4 tbsp melted butter
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tbsp warm water
- Add all ingredients EXCEPT baking soda and water together in a bowl. Add baking soda to 1 tbsp warm water. Preheat the stove with pans to medium heat. Melt coconut oil or butter or your choice of non-stick. I like to use cast iron, it doesn't stick. Add the baking soda/water to the batter and mix. Pour desired size of pancake onto the pan or griddle.
